When preparing this tortilla, we take the opportunity to leave traces of vegetables that we have in the pantry.
For that reason, as we have done with zucchini and potatoes, you can also prepare it using eggplants or adding other ingredients that you have and begin to fall behind, such as tomatoes, mushrooms, carrots … If you want you can also add inside some taquitos of ham or bacon.

How to make tortilla zucchini and brie

Peel the potato and cut it into very thin slices preferably with a mandolin and let them cool in the water. With a peeler, we take elongated and very thin slices of the zucchini. Once we have prepared the tortilla ingredients, we fry the potatoes in extra virgin olive oil.
When the potatoes are practically ready, we add the zucchini and let the whole fry for two or three more minutes since the zucchini so fine is made immediately. If you use other harder ingredients like pumpkin or carrot, you will have to throw them at the beginning with the potatoes.
Beat the eggs in a bowl. Drain the potatoes and zucchini and put them in the bowl with the egg, stirring so that everything is impregnated well. We curdle the tortilla in a pan over medium-high heat so that it is well browned on the outside but juicy inside.
Once the zucchini tortilla is curdled, we take it out and place it on a plate and immediately afterward, we cut a triangle of brie cheese into three portions and place them on the tortilla so that they melt on it with the remaining heat, serving immediately.
