We will start by grating the lemon, in a bowl we put the mascarpone cheese at room temperature, the sugar, the egg yolks, the salt, the vanilla extract and mix with a silicone spatula.
Add the sifted flour and chemical yeast. Mix again to form a soft dough. We preheat the oven to 180 degrees Celsius.
With two teaspoons we deposit balls the size of a nut of dough, in a baking tray lined with sulfurized paper. We crush them lightly and bake them for 20 minutes or until we see them golden brown. We let them stand on a rack until they cool.
