The result has been this recipe for curried chicken meatballs so rich that it will be the one we will prepare the next time we invite friends to dinner at home.
So much to serve as an appetizer or entree, as well as to use them as a main course, the meatballs always give a great result and in general everyone likes them. - Minced chicken breast500 g
- 400 ml of coconut milk
- 2 tablespoons ground curry
- Crumb of hard bread60 g
- Citronella or lemongrass, a stalk

- Half tablespoon breadcrumbs

When we buy the breasts, we ask the butcher to chop them in the machine. In a deep dish, mix the chicken with the breadcrumbs, the egg and a spoonful of curry powders. With a fork mix well. Apart, we soak the bread crumb with a good dash of coconut milk keeping the rest for later. When the crumb is very wet we add it to the minced chicken meat and mix well.
We form balls carefully and pass them by flour. We fry them in extra virgin olive oil and leave them in a low-walled casserole. In the same oil where we have fried the meatballs, we poach the very chopped onion next to the carrot that we will also have cut into small pieces.
While they are being made, we cut the lemongrass in detail until almost a paste is obtained. Add the green pepper and lemongrass to the pan, letting it cook for a few minutes. Add the other tablespoon of curry powder and raisins and then a glass of chicken broth.
Once boiling, add the rest of the coconut milk and let the whole cook for 20 minutes until the meatballs are very tender. We try and rectify salt and serve very hot.

These original curried chicken meatballs are excellent to take as a snack at meetings of friends and other celebrations. If you want to take them as a main course, the best accompaniment is a bowl of white rice and some chutney.
