Couscous, broccoli and orange vinaigrette salad, recipe (with video included) ready in less than 30 minutes

  • Couscous200 g
  • Water or vegetable stock180 ml
  • Orange1
  • Broccoli1
  • Modena Vinegar30 ml
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Ground black pepper
  • Salt
  • Peeled hazelnuts50 g
  • Flat pita bread to accompany (optional)

How to make couscous, broccoli and orange vinaigrette salad

We boil the water with a little salt, add the couscous, mix gently, remove from heat and cover with plastic wrap. Let it hydrate for a minimum of 10 minutes. Grate the orange peel on top and scratch with the tips of a fork to separate the grains. We reserve.

Cut the broccoli into small pieces, trunk included, and sauté it in a pan with a little extra virgin olive oil for three or four minutes. Prepare the vinaigrette by mixing the vinegar, mustard, honey, a couple of tablespoons of orange juice (optional), some ground black pepper and salt. Mix the couscous with broccoli and season.

We can serve immediately, with chopped hazelnuts on top and accompanying pita bread, or let stand in the fridge for a while so that the flavors settle. To taste.
